1 1/4 C water
1 C white flour
1 3/4 C wheat flour
2 TBS wheat germ
2 TBS ground flax seed
2 TBS wheat gluten flour
2-3 TBS canola oil
1/2 tsp salt
1 TBS yeast
1 TBS sugar
2-3 TBS orange zest (grate the peel of a washed orange with a cheese grater)
1/2 C craisins (dried cranberries)
Mix all ingredients in the bread machine on the dough setting. Place in greased bread pan, let rise, bake at 350 degrees for 30 minutes. Remove from oven, turn out of pan onto a cookie rack, grease the top with butter. Let cool before cutting.
Don't be intimidated by the wheat germ, flax seed or gluten. They can be omitted and replaced with 2 C wheat flour in lieu of 1 3/4 C wheat flour. Pay attention to the consistency of the dough. Sometimes I have to add a bit of flour or water if it's too wet or stiff.
