This is really easy and the kids LOVED it.
2/3 cup sugar
1/4 cup soy sauce
1 TBS lemon juice
1 tsp. minced garlic
1/2 tsp. ginger
1/3 cup water
1 TBS cornstarch
4 skinless, boneless, chicken breasts
Combine sugar, soy sauce, lemon juice, oil, garlic and ginger in a small saucepan. Combine water and cornstarch in a small bowl and stir until cornstarch is dissolved. Add to the saucepan and turn heat to high. Stir often while bringing mixture to a boil, then reduce heat and simmer for 4 to 6 minutes or until sauce is thick.
The original recipe has you grill you chicken. I was lazy and it still turned out great. If you grill it, once they are done- cut them into bite size pieces. If you do not grill it, you can cut it prior to cooking and stir fry the chicken in the bite size pieces. When the chicken is done and the sauce is done, pour the sauce into the frying pan with the chicken and stir it together. Easy and delicious. Serve this over steamed rice.
